Hello Fall! Apples are in season and this little recipe makes them the star. This is an awesome after school snack or maybe even a late night snack that will satisfy your sweet tooth. This has a great combination of textures… the crisp apple, the smooth and warm peanut butter and rich choclate chip crunch. I love any reason to use peanut butter so bring on the apple nachos!

Apple Nachos

By Serves: 2 Prep Time: 5 minutes Cooking Time: 2 minutes

Ingredients

  • 1 large apple of your choice (honeycrisp is a personal favorite)
  • 1/4 cup smooth peanut butter
  • 1/4 cup mini chocolate chips (dark chocolate would be great)
  • 1 tsp fresh lemon juice
  • 1/2 cup water

Instructions

Fill a medium bowl with water and lemon juice.

Core and thickly slice the apple.

Add the apple to the lemon water and toss to fully coat. This will help keep your apple from browning.

Remove the apple slices and lay them on a sheet of paper towel to dry.*

Arrange the apples in a single layer on your serving plate and set aside.

Place the peanut butter in a microwave safe bowl and microwave for 30 seconds, stir, and repeat until the peanut butter is melted.

Drizzle the melted peanut butter over apple slices and sprinkle the mini chocolate chips over the top. Now… dig in!

Notes

*If you're just making these for yourself to enjoy right away, you can skip this step. Putting the sliced apples into lemon water just helps the apple to keep from browning (not so appetizing), but who cares if you're just going to dive right in?!
