My favorite way to enjoy this chicken salad is simply on crispy lettuce. Buuuut… if I wanted to get a little decadent… stuffing this in a croissant would be soft, flaky and delicious!

Using the rotisserie chicken makes this whole thing come together so quickly. If you don’t have rotisserie chicken hanging around, you could always cook up an extra chicken breast when making dinner one night to have waiting for you when you want to throw this together. Looking at me thinking ahead for you! 😉

This is simply portioned for two people, but don’t be afraid to double or triple this to feed a crowd. Just be sure to add the avocado right before serving so it stays beautiful and bright green. Or you can add a squeeze of lemon juice to the mix. That’ll give this salad a nice bright punch along with helping to keep the avocado looking fresh.


BLTA Chicken Salad

By Serves: 2 Prep Time: 10 minutes

Ingredients

  • 1 c rotisserie chicken, chopped into bite sized pieces
  • 1-2 tbsp mayo
  • 4 slices bacon, cooked
  • 1 small tomato, chopped (or a handful of sliced cherry tomatoes)
  • 1 avocado, pitted and chopped
  • freshly ground black pepper
  • 1 tsp parsley, chopped (optional)
  • 2-4 leaves of romaine or iceberg lettuce

Instructions

In a medium size bowl, combine rotisserie chicken and mayo. If you want a more creamy salad, add more mayo. Stir and season with pepper.

Crumble the bacon and add it to the chicken mixture along with the chopped tomato and parsley (if using). Stir to combine all the ingredients.

Just before serving, gently fold in the chopped avocado. Load the chicken mixture onto the crisp lettuce and enjoy immediately.
