Meatless Burrito Bowl

This is one of my favorite kind of meals. As some of you know… I’m pregnant (yay!) and have not exactly been craving meat lately. Using Sweet Earth Awesome Grounds has allowed me to fool my husband into thinking we are eating meat while giving me the protein and fiber that I need.

These types of meals are especially awesome because they are soooo adaptable. I like to plan these towards the end of my week when ingredients in the fridge need to be used up. Sometimes my bowls will have peppers and onions added to make them more fajita style (if that’s what I need to use up) and other times they’ll turn into more of a salad bowl if I’ve got lettuce from a different dinner that can be used up.

Once you get the basics for a good burrito bowl down, the combinations are pretty endless!

Now although this says burrito bowl, I like to use a taco seasoning to season the Awesome Grounds just like I would use with ground beef. It’s a simple method and yields some delicious flavor without a lot of work on my end.

Turn this into a weeknight staple as it comes together in under 30 minutes and can easily be doubled to feed the whole family!

Meatless Burrito Bowl

Ingredients

  • 1 c white rice
  • 2 tbsp cilantro, chopped
  • 1/2 lime
  • 12 oz Sweet Earth Awesome Grounds
  • 1/2tsp oil
  • 3 tbsp taco seasoning of choice
  • 1/4 c water
  • 1 head romaine lettuce, shredded
  • 8 oz frozen sweet corn, defrosted
  • 1 c shredded cheese
  • 4 tbsp sour cream
  • 4 tbsp salsa of choice
  • 1-2 avocados, smashed

Instructions

Cook rice according to package directions. Once cooked, add cilantro and juice from lime. Fluff with fork and set aside.

In a medium saucepan, heat 1/2 tsp oil on medium-high heat. Add Sweet Earth Awesome Grounds and cook 7 minutes, breaking up grounds as you heat through.

Once the grounds are heated through, add taco seasoning and water to the pan. Stir and simmer 2-3 minutes. Remove from heat.

Now it's assembly time!* Divide cilantro lime rice, grounds, lettuce, corn, cheese, sour cream, salsa and smashed avocado evenly among 4 bowls. Dig in!

Notes

*If you are saving part of this for another dinner or lunches, put away the rice, grounds, and corn in a tupperware container. Heat this part up befpre adding all the other goodness.
