Oreo Rice Krispie Treats

Alright… these guys lean a liiiiiiittle more to the tasty side! Gooey marshmallow, crispy puffed rice and smashed oreos all mixed in one portable dessert!

These are an awesome summertime dessert! Each time we have a birthday party at the pool, the beach or the park (we are in Southern California so we are always outside for the birthdays) I always try and steer the kids away from a cake. The frosting always end up melting a bit and I basically can’t keep them pretty with the transferring and the heat. These are so easy to transport and I turned them into a little tower-like cake for the birthday girl 🙂

This was a fun recipe for the kids to help with. For the oreos, I just threw them in a large ziploc bag, zipped it up, gave my stepdaughter a rolling pin and let her rip! She almost did too good of a job (the poor bag was not exactly reusable after that)! Haha

The kids are also getting to the age of being able to help by the stove. They got to help by stirring the butter and the marshmallows. We probably look pretty silly because I have them wear a giant oven safe mit to do the mixing. I can’t return them to their mom with burns on their arms from my dutch oven 😉

These treats can be made 30 minutes before or up to the night before. I don’t like to go any further because they can get a little stale and I want the marshmallows to still be ooey and gooey.

Obviously these are filled with Oreos but I’m sure there are tons of tasty creations to be made… Reeses or M&Ms or even another cookies all smashed up and added in.


Oreo Rice Krispie Treats

Ingredients

  • 5 tbsp unsalted butter
  • 9 c mini marshmallows, divided
  • 5 c Krispie cereal
  • 20 Oreo cookies, divided
  • ½ tsp salt
  • non-stick cooking spray

Instructions

Prepare a dish by spraying it with non-stick cooking spray. I like to use my 9 inch square pan so that I get thick pieces. If you want thinner pieces or want to use a cookie cutter, you can use a 13x9 dish.

Put 16 Oreos into a large ziploc bag. Remove the air and seal the bag. Use a rolling pin to smash the cookies to your desired size. Smaller pieces will get distributed throughout the whole treat while big pieces will make for big chunks of Oreo bites.

Pour the crushed Oreos, 1 c of marshmallows and the Krispie cereal into a large bowl. Stir and set aside.

In a large pot (I use my dutch oven for this), heat the butter on low heat until melted. Add in 8 c of mini marshmallows and the salt. Gently melt the marshmallow on low heat, stirring continuously.

Once melted, remove from heat. Add the mixture of crushed Oreos, marshmallows and cereal. Use a spatula to mix completely. This may take a little elbow grease 🙂

Once the cereal and Oreos are completely covered with melted marshmallow, transfer the mixture to your prepared dish.

You can use the spatula to smooth out the top of the Krispie treats. I like to spray a little non-stick cooking spray on my fingers and use my hands to get the treats evened out in the dish (it’s just a little thing my mom used to do when I was a kid).

Take the remaining 4 oreos, smash them in your hands and press them into the top of the treats. This is mainly for pretty purposes but who doesn’t want more Oreos in an Oreo Rice Krispie Treat?

Set for at least 30 minutes and enjoy! Store in an airtight container.
